Oatmeal recipe
Almond Joy Oatmeal
(This recipe yields 1 serving) Printable Version
1 cup dry old fashioned oats
water (as directed)
1 Tablespoon shredded coconut
1 scoop (about 1/4 cup) chocolate protein powder
sugar-free Da Vinnici coconut syrup - to taste
sugar-free Da Vinnici chocolate syrup - to taste
In crock pot cook oats with water for about 1 hour. Stir in Chocolate protein powder, syrups, and shredded coconut.

Apple Snapple Oatmeal

1 medium apple or pear
3 cups apple juice or cider
1 and 1/3 cups regular rolled oats
1/4 cup raisins or chopped pitted dates
1/4 teaspoon ground cinnamon
milk (if you like)
brown sugar (if you like)
On a cutting board, use a sharp knife to cut the apple or pear into 4 pieces. Cut out the core and throw it away. Chop each piece.
In a saucepan, put the chopped apple or pear, apple juice or cider, oats, raisins or dates, and cinnamon. Stir with a wooden spoon to mix. Put the pan on the burner. Turn the burner to medium-high heat. Cook just till bubbly. Turn the burner to low. Simmer, uncovered, for 5 minutes, stirring now and then. Turn off the burner. Remove the saucepan from the burner.
With a large spoon, put the oatmeal into 4 cereal bowls. Serve immediately with milk and brown sugar, if you like.
This can also be made in the microwave. Just reduce the liquid to 2 and 1/2 cups. Microwave the stirred ingredients on high for 3 minutes in a covered microwaveable 2-quart casserole dish. Stir and microwave 3 minutes more.
Apple Walnut Oatmeal

2 cups old-fashioned oatmeal (not instant)
1 cup low-fat milk
2 medium apples - cored and peeled and diced
1/2 cup crushed walnuts
2 Tablespoons maple syrup
1 teaspoon cinnamon
Cook oatmeal per package directions.
Stir in the apples pieces, 3/4 of the nuts, cinnamon and maple syrup.
Distribute oats among four bowls. Top with milk and remaining walnuts.
Apples And Oats Porridge

4 cups water
1 and 1/2 cups oat bran (not oatmeal)
1 large apple - peeled/cored and chopped into very small pieces
1/3 cup raisins
1 Tablespoon pure maple syrup
1/2 teaspoon ground caraway seeds
1/2 teaspoon cinnamon
1/2 teaspoon salt
Milk for serving (optional)
In a large (at least 2 quarts) sauce pan over high heat, bring the water to a boil. Stir in the oat bran and allow water to return to a boil. Reduce heat to low and cook for two minutes - stirring often.
After two minutes, turn off heat. Stir in the apple, raisins, maple syrup and spices. Let stand until apple pieces soften - about 5 minutes - stirring occasionally.
Divide hot cereal evenly among 4 bowls. Serve with the milk if desired.
This is kind of like a super delicious homemade Cream of Wheat style hot cereal - but with all the goodness of oat bran.
Apricot Honey Oatmeal
(This recipe yields 4 servings) 3-1/2 cups water
1/2 cup chopped dried apricots
1/3 cup honey
2 cups Quaker Oats (quick or old fashioned uncooked)
1/2 teaspoon ground cinnamon
1/4 teaspoon salt (optional)
In 3-quart saucepan, bring water, apricots, honey, cinnamon and salt to a boil.
Stir in oats; return to a boil.
Reduce heat to medium; cook about 1 minute for quick oats (or 5 minutes for old fashioned oats) or until most of liquid is absorbed, stirring occasionally.
Let stand until of desired consistency.
Baked Apple Oatmeal
(This recipe yields 6 servings) Printable Version
3 cups rolled oats (quick or old-fashioned)
2 cups chopped apples
2 cups milk
1/2 cup brown sugar
1/4 cup melted butter
1/3 cup applesauce
1 large egg - beaten
1 and 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
3/4 teaspoon salt
Prepare a 2-quart baking dish with a light coating of cooking spray.
Preheat oven to 400 degrees.
In a large bowl, combine the oats, baking powder, salt and cinnamon.
In a seperate bowl, mix together milk, egg, applesauce, butter, and brown sugar.
Stir the liquid ingredients into the dry and pour into prepared dish.
Bake for 20 minutes.
Stir the oatmeal, fold in the chopped apple and bake 20 more minutes until top is lightly browned.
Spoon into serving bowls and serve with milk and a little extra brown sugar.
You can replace the apples with equal an equal amount of blueberries or other fruit.
Baked Oats
(This recipe yields 4 servings) Printable Version
4 cups old fashioned oats
1 cup chopped apple
1/2 cup chopped walnuts
1 teaspoon salt
4 cups water
1 teaspoon vanilla
1/2 cup dates
Combine oats, walnuts, raisins, and salt in a bowl and mix well. In a separate container combine water and vanilla. Combine all ingredients, stirring gently. Pour into oiled 8" x 8" baking dish. Bake at 350 F for 60 minutes. Stir in dates and serve.
